When your SO orders corn at a restaurant for you – it is a true testament of love. At least that’s how I felt on my 28th birthday when JM ordered overpriced $7 street corn for me at Water Grill. He doesn’t even like corn, but I would eat it in every meal. I do hate that restaurants tend to up charge for the appetizer, though I just can’t help that my eyes light up at the sight of corn on a menu. Even if I’m unable to help myself, maybe this corn recipe is good enough to stop YOU from ever ordering corn at a restaurant ever again. With $7 you can make this meal for the whole family!
Miso Butter Corn
Description: Savory, buttery corn filled with umami. Great as a side for dinner or as a snack.
Servings: 2-3
I N G R E D I E N T S:
- 3 Cups Frozen Sweet Corn
- My favorite brand is Earthbound Farms at Whole Foods but it’s pricey for what it is.
- Second best options are at Trader Joes: Frozen Roasted Corn is best then next is the Sweet White Corn
- 1 Tbsp White Miso Paste
- 1 Tbsp Salted Butter Softened (Can also sub for vegan butter)
- 4 Garlic Cloves, Minced
- 1 Tsp Oil
- 2 Stalks Green Onions Chopped
I N S T R U C T I O N S:
- Whisk butter and miso paste together to form a smooth paste. Leave aside for now.
- In a skillet over medium high heat, heat up oil and garlic. Add frozen corn directly from freezer. Cook until corn has been heated and all liquid is evaporated, then cook it some more until some kernels begin to brown.
- Add in the miso butter mixture and combine with corn stirring until all butter has melted. Add in the chopped onions and mix together. Plate and enjoy!
This is the basic recipe that you can whip in ten minutes. It will for sure be a crowd pleaser at any pot luck or dinner party. To elevate, here are some #Nganstoptips:
- Consider topping or mixing with some crispy bacon! The crunchy bacon will add texture and bold smokey flavoring to this side dish. If you want to keep this vegetarian or vegan, try adding crispy shallots or garlic bits. Your guests won’t be able to resist!
- Serve with tortilla chip as a corn salsa, add in some spicy jalapenos for some extra heat.
- Corn goes great with BBQ! Serve with a side of ribs, kbbq, or even on some white fish.
- Recipe calls for frozen corn for ease of use, but if you have some extra time – using corn fresh from the cob will yield the best results. Fresh corn from the cob will have better bite, texture and flavor! Also during this time of year, you can find fresh corn for cheap – some stores even have them going 10 for $1! It’s a win-win. Simply cut the kernels off the cob and cook in the skillet the same way. It will take around 6-8 minutes for corn to fully cook.
